The former Liverpool striker retired from football while at the Spanish side last year and they want compensating.
Collymore's solicitor, Richard Green, said: "The £7m figure was inserted as a transfer fee should Stan leave Oviedo and we are fighting the action because Stan has retired and not moved to another club."
